M27C1001 in place of mask roms?

I wired up 2 of these 27C1001's to a Tsrom board for the CHR and the PRG. I followed this guide :

Do I have to bridge pin 31 to 32 on both chips?

Learn to read schematics:

Pin 31=/PRG
Pin 32=VCC.

/PRG is PRG not, so when it's low, it's in programming mode, when it's high it's disabled. Tying it to 32, 5V, will pull it high so it won't be programming. So yes, you do.
