What other carts are compatible and have 256Kb SRAM? Is there a list of specs of carts somewhere that I could refer to in the future?

Take any game with similar ROM "mode" (LoROM/HiROM), and just swap the 6116 or 6264 with a 62256.

What about speed of the SRAM chip?

I don't know any SNES cart with SMD SRAMs on them. Since SRAMs in Hi-ROMs cannot exeed 8kB I guess this is a Lo-ROM, but then I didn't remember PRG-ROM in LoRoms cannot exeed 24kb....
I guess the board you should look at should be named something like SHVC-1A5M or something similar. I guess you could modify the common SHVC-1A3B to get it by adding more chips to do decoding for larger PRG-ROM and SRAM, and rewire a thing or two.
